THE PERFECT SERVE
For optimal tasting, adhering to certain guidelines is essential. Marie-Christine Osselin, Wine Experience Manager, recommends storing champagne away from light and heat (12-13°C), then chilling it as follows: a few hours in a fridge or 15 to 20 min in an ice bucket (1/3 of Ice cubes, 2/3 of cold water), never frost the Champagne. A temperature between 8-10°C for non-vintage, 10-12°C for vintage is ideal for fully appreciating the aromatic complexity of our wines. For optimal experience, discard the traditional flute in favour of our 870 glass, crafted by our Cellar Master, Benoît Gouez, effervescence guru Gérard Liger-Belair and the prestigious glassmaker Gérard Lehmann. If you don’t have this glass, opt for a white wine glass, whose wider opening allows the full bouquet and subtleties of our champagnes to be released.
THE CHAMPAGNE PAIRING
Moët & Chandon Executive Chef, Jean-Michel Bardet, favours simple yet refined dishes that complement the characteristics of the champagnes. Moët Impérial is a perfect pairing for seafood, lightly cooked dishes, and dishes with delicate salinity. Rosé Impérial pairs well with shellfish such as lobster or prawns, with lightly flavoured cuisine such as pink berries and Espelette pepper, or with duck for meat or fresh goat’s cheese.
First appetizer: Ideal pairings for Moët Impérial Brut include seafood platters or dishes like “Le Turbot en Bellevue”. This classic French dish is revisited with a modern twist, featuring a perfectly cooked white fish for a supple texture, a pear-based condiment to complement the fruity Moët & Chandon style, and a hint of ginger for a touch of freshness and spice. The accompanying elements are presented in various-sized spheres to enhance the champagne’s elegant effervescence. Caviar completes the flavours, adding a final touch of essential saline and iodine notes to deliciously reveal the Moët Impérial Brut.
Second appetizer: Ideal pairing for Grand Vintage Rosé 2016 is lobster “Vol-au-vent”. This classic French celebration dish combines the “Vol-au-vent” with exceptional lobster from the Brittany coast. The lobster provides a gentle salinity, harmonising with clementine and pink peppercorns to echo the fruity, subtly spicy, elegant, and precise aromatic notes of the Grand Vintage Rosé 2016.
Main course: Ideal pairing for Grand Vintage 2016 is Christmas poultry in a bread crust. No Christmas table is complete without poultry! We suggest selecting high-quality, locally raised poultry. Cooking it in a crust, besides its spectacular presentation, helps maintain a juicy and delicate meat. In this dish, the perfectly cooked poultry, with its melt-in-your-mouth texture, complements the Grand Vintage aromatic notes. Lacto-fermented lemon, fennel and anise create a delicious ode to the radiant, serene, and harmonious bouquet of Grand Vintage 2016. Desserts: Ideal pairing for Nectar Impérial Blanc is Christmas Orange. In France, gifting an orange at Christmas symbolises offering a sun-kissed fruit during a cold, dark season. It’s a precious gesture signifying care for the recipient. In this dessert, the generous flavours of coconut and citrus pay homage to Nectar Impérial Blanc’s fruity and indulgent bouquet. The crunchy chocolate shell, combined with the creamy coconut mousse, complements the champagne’s creamy effervescence for a flamboyant and delicious finish.
