Red Lentil Dip

1 cup cooked red lentils
1 Tbsp Nuts About Cooking Coconut Oil
1/3 onion, chopped
1 tsp cumin
1 Tbsp tahini
1 clove garlic, chopped
1/3 lemon
Salt and pepper.

  • In a pan, add the onion and fry for five minutes.
  • Add the garlic and cumin and fry for another two minutes.
  • Remove from the heat and place all the ingredients into a blender, season, and blend until smooth.
  • Add a splash of water if necessary to loosen.

Green Quinoa Salad

2 cups cooked quinoa
2 cups fresh coriander
1 cup mint leaves
1 cup fresh parsley
½ lemon, squeezed
1 clove garlic
1 Tbsp tahini
2 Tbsp Nuts About Cooking Coconut Oil
2 Tbsp water
Salt and Pepper

  • Place all the ingredients (except the quinoa) in a blender and blend until smooth.
  • Fold through the quinoa, store in the fridge.
